Almond Butter Banana Bread


Ingredients:

2 medium overripe bananas

1/3 cup natural almond butter

1/3cup honey

2 flax eggs (2 tbsp flax meal, 6 tbsp water)

2 tsp vanilla

1 cup almond flour (do not pack, spoon into butter measuring cup and level)

1 cup oat flour

1 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

1/2 cup dairy-free, sugar-free chocolate chips


Instructions:

1. Preheat the oven to 350F and prepare a loaf pan with either parchment paper or nonstick spray.

2. In a large bowl, whisk together mashed bananas, almond butter, honey, flax eggs, and vanilla.

3. In a separate bowl, combine almond flour, oat flour, baking soda, cinnamon, and salt.

4. Add dry ingredients to wet and stir until completely combined.

5. Fold in chocolate chips.

6. Pour into a loaf pan and extra chocolate chips on top

7. Bake for 45-55 minutes or until the toothpick comes out clean. I covered mine with tin foil about 30 minutes into baking to make sure the top doesn’t burn.

8. Store at room temperature for 2 days or in the fridge for up to 5 days. Freeze individual slices for up to 4 months.
