Quinoa Salad


Ingredients:

  • 1/2 cup quinoa

  • 1/2 pack cherry tomatoes

  • 1 cucumber

  • 1/4 cup parsley, finely chopped

  • 1/4 cup mint, finely chopped

  • 1/4 cup cranberries

  • 1/4 cup roasted pistachios, chopped

  • Juice of 1/2 lemon

  • 1/2 tbsp pomegranate molasses

Instructions:

  1. Cook the quinoa. Set aside and let cool.

  2. Chop cherry tomatoes and season generously with salt.

  3. In a large bowl, add your quinoa, cherry tomatoes, cucumber, and herbs. Squeeze over the lemon and pomegranate molasses then season with salt and pepper to taste.

  4. Top with the nuts and cranberries before serving.
