Raspberry Dark Chocolate Squares


Ingredients

Bottom:

1 Cup oats

1/2 Cup shredded coconut

2 tbsp cacao powder

1 tbsp coconut oil

2 tbsp maple syrup


Filling:

2 cups frozen raspberries (defrosted)

3 tbsp chia seeds

1 tbsp maple syrup

1 tbsp coconut oil


Top:

3/4 cup dark chocolate chips (dairy-free and sugar-free)

1 tbsp coconut oil


Instructions:

1. Blend the oats and shredded coconut in a blender then put them in a bowl

2. Add the rest of the bottom ingredients to the bowl (add a little water if too dry)

3. Line a loaf tin with parchment paper or tin foil

4. Press the base ingredients into tin

5. Mash raspberries until fully broken down and stir in the rest of the filling ingredients

6. Spread evenly in the tin over the base ingredients

7. Melt the chocolate chips and stir in the coconut oil then pour on top of the filling

8. Place in freezer overnight or for at least a few hours

9. Cut into squares!!
