Samoa Cookies


1 cup shredded coconut

3/4 cup chopped dates

Pinch of salt

1/2 cup melted dark chocolate


1. In a food processor combine coconut, dates, and salt.

2. Roll dough into balls and set on a baking sheet.

Flatten and form a hole in the center of each cookie, and let set in the freezer.

3. Melt chocolate and dip coconut cookies into the chocolate to coat the bottom. Drizzle chocolate on top and put it back into the freezer to set.

4. Store in the freezer or fridge
